Sorry for the crickets over here! I’ve been busy working on a few personal and blog projects that have been taking up quite a bit of my time. I will be hopefully be posting more frequently again soon.
I didn’t want to miss another Friday Treat Day though, especially since its that time of year for one of my favorite treats of all time: Rum balls! My mom used to make them for all her grown up holiday parties. I remember sneaking a bite or two and loving them. I envied all those grown ups so much!
Finally, I grew up, and can have all the rum balls I want now! So every Christmas I make them. I make them for holiday parties, I wrap them up in a pretty box and deliver them to the neighbors as gifts, and we eat our fair share just my husband and I too :)

Chocolate Rum Balls
- 1 cup semisweet chocolate chips (about 6 ounces)
- 1/2 cup sugar
- 3 tablespoons light corn syrup
- 1/2 cup dark rum
- 2 1/2 cups finely crushed vanilla wafer cookies (about 10 ounces)
- 1 cup finely chopped walnuts
- 1/2 cup powdered sugar
Stir chocolate in a small pot over low heat (or if you have a double boiler, set over simmering water until melted and smooth). Remove from heat and whisk in 1/2 cup sugar and corn syrup, then the rum. Place vanilla wafers in a food processor, if you have one (if not crush by hand), and crush up. I also put the walnuts in a food processor. Mix vanilla wafers and walnuts in medium bowl to blend; add chocolate mixture and stir to combine and blend well.
Place 1/2 cup powdered sugar in shallow bowl. For each rum ball, roll 1 scant tablespoon chocolate mixture into generous 1-inch ball. Roll balls in sugar to coat evenly. Cover and refrigerate at leas overnight or up to 5 days.
